Whether you are single, retired, or back to “just the two of us,” we all can be challenged with maintaining healthy eating, particularly in busy seasons and/or when we are no longer cooking for a family. This class will provide many ideas for quick meals that serve as lunch or a lighter supper. I’ll share ideas of how to make meal preparation so much easier — to the point that we will say to ourselves, “Skip the drive-through, I’ve got much better options at home in my kitchen!”
